This chocolate cherry parfait is all about layers of comfort – from a base of juicy cherry compote to creamy Greek yogurt, crunchy chocolate granola clusters, and sweet cherries on top. The best part? It was inspired by my cozy chocolate cherry rooibos latte I created. Chocolate Cherry Dreams all around.

Sometimes (okay often for me because I almost never follow directions) the best recipes happen on a whim. Picture this: a quiet afternoon at home, still savoring the flavors of a chocolate cherry rooibos latte I made that morning. The latte was like dessert in a mug – warming, chocolatey, with a whisper of cherry. I loved those flavors so much that I didn’t want the vibe to end. So, with latte-inspired creativity, I grabbed some Avinola Chocolate Clusters Granola and Greek yogurt. The result was this chocolate cherry parfait –simple and easy to put together, but each bite feels more decadent than the last.

Layers of Goodness

No exact measurements needed here – this parfait is more about assembling and enjoying the moment. I grabbed a few ingredients I had on hand and layered them by feel. Here’s what you’ll need (adjust the amounts however you like, as if you were making it for a friend or just yourself):

  • Cherry Compote: A few spoonfuls of cherry compote make the fruity base. You can use homemade or store-bought. The syrupy cherries settle at the bottom, waiting to infuse everything with their sweetness. (If you don’t have compote, try a chunky cherry jam or gently cooked down frozen cherries with a touch of honey.)

  • Greek Yogurt: The middle layer is plain Greek yogurt – thick, creamy, and tangy. It’s the perfect contrast to the sweet cherries. Spoon the yogurt generously over the compote; as it settles, a bit of ruby-red cherry juice might swirl into the white yogurt, and that’s pure bliss.

  • Chocolate Granola Clusters: Next comes a handful of crunchy chocolate granola. I used my current fave Avinola double chocolate granola clusters (they’re grain-free and made with lupini bean flakes for a unique twist). The chocolatey clusters add a satisfying crunch and tie in the latte’s cocoa notes. And that granola on top isn’t just tasty – it’s a bit of a superfood in disguise, since Lupini bean granola packs in fiber and plant protein. Sprinkle enough to cover the yogurt, so every bite gets some crunch.

  • Dark Sweet Cherries: Finally, the crown jewel – a handful of dark sweet cherries on top. I used frozen cherries that I thawed (letting them sit at room temp for a bit does the trick). They’re plump, sweet, and juicy. I gently placed them over the granola. As they thaw fully, their juices may mingle with the yogurt and compote below – yum! You could slice the cherries in half or leave them whole. I left mine whole for a rustic look, because it just felt extra charming.

I didn’t fuss with any sweeteners because the cherry compote and chocolate granola brought enough sweetness. But you can always drizzle a little honey or dark chocolate syrup on top if you’re feeling fancy. This parfait came together in under 5 minutes, an intuitive assembly where you really can’t go wrong – add more yogurt if you want it creamier, more compote if you love it extra fruity, or more granola for crunch. It’s all up to you.

🍒Grab a cozy spot and sink in with your parfait, dig your spoon straight down to get a bit of each layer.

I love that this recipe doesn’t need any measurements or strict rules. It’s the kind of easy treat you can throw together during a relaxing break, whether it’s for a slow weekend breakfast or a weeknight dessert. And the ingredients are flexible – if you have vanilla yogurt instead of plain, use that; if you prefer fresh cherries or another fruit, go for it. The idea is to enjoy the process and make it your own.
